My Mother used to cut the Cucumber and salt them in a bowl for 1/2 hr till they let go of a lot of water then she rinsed them and placed them in a clean towel and dryed them and returned them to the bowl and then added the oil,vinigar, salt, pepper, pinch of sugar and onions and then after resting for an hr. she would add a tablespoon of sour cream ...optional

Was interesting to read about onions and sometimes garlic being added. My mother, who was born in Austria never added these. She simply covered thinly sliced cucumber with a sprinkle of salt. Then after 30 mins, rinsed off the salt and covered with equal parts oil and vinegar, plus a teaspoon of sugar and a bit more salt if needed. Then covered and chilled in the fridge for at least 2 hours. The salad was always super cold and crispy.
