Type of Potato to use

Hello! First, thank you for all of the recipes!
Now... You don't mention what kind of potato to use, but I would recommend Yukon Gold potatoes. They would be the closest thing you can find to a German potato in color and taste. Only other alternative is to order specific potatoes on-line. :)
